So, tomorrow I have part one of my fifth term practical. This is the last big test in my school short of the reality of working in the cafe for 6 weeks. The test is two days long with 3 hours of working time both days. We have to make a raspberry mousse cake, chocolate truffles and challah. I am thinking it will be easier than last year, fewer components, but each component has a more specific timing to it. Challah, for example, must be started immediately upon entering the room because it has to sit for 20 minutes, then 35, then an hour, then you have to bake it for twenty. Oh yeah, then you also have to mix it for 12 minutes and divide, shape and braid it. I hope i do well. I am hoping to get a high pass (95% or above). BUT, I am nervous I won't be able to. I hope I will be able to pull it off, but we'll see. I am not too concerned about failing, but we'll see what happens.
