YES WE CAN… Haz cupcakes.
Even I have started to get in the inaugural mood, despite earlier hopes of missing the DC inaugural madness. Today I baked inaugural cupcakes.
After trying the $3.50 cupcakes from Red Velvet I decided to try my hand at making my own red velvet cupcakes with cream cheese frosting. The cake is every bit as good as Red Velvet’s: light and fluffy, flavorful, tasty, moist, and they even have a very light crust on the top. Perfect. The frosting was not nearly as good; it wasn’t as light and it tasted like sugar before cream cheese. It isn't bad, just not as good as it could be.
Overall I think my cupcakes are better than Red Velvet’s if only because with the addition of blue sprinkles they are now inauguration themed, which means they are connected with all kinds of catchy sayings.
