It's fun watching folks account for their Snape-ish adventures in fic, so let's call it a meme. I can't compare with serious Snape fen, but I have written the following pairs:

Snape/Lupin
Snape/Black (after a fashion)
Snape/Dumbledore (pre-slash, but hey, romance is not my thing)
Snape/Neville (er, again, pre-slash)
