Christmas baking

Started my xmas baking today. Decided to get really ambitious after browsing recipes on foodnetwork.com. I had seen Giada make Biscotti and it looked good. I have never made it before but have decided to give it a try.

this is my starting list of what I am making:

Peanut Butter and Chocolate Biscotti
Holiday Biscotti (with dried cranberry and Pistashios dipped in White Chocolate)
Rum Balls
Almond Rocha Cookies
Kolachky
Toffee Bars
Mexican Wedding cakes

Seemed like I was in the kitchen all day yesterday and the only cookies I got done were the Peanut Butter & chocolate Biscotti and the rum balls. Also got the dough made for the kolachky but it has to chill overnight. The biscotti did turn out pretty good although its not something so marvelous that I will add it to me make every year list. Its ok...just nothing really, really special for all the time and effort it takes. Hopefully the Holiday Biscotti will turn out a bit more interesting.

I am going to do more baking today. Will bake off the kolachky and make the almond Rocha cookies. Will probably wait and make the mexican wedding cakes and toffee bars sometime during the week. Of course if the first couple things I am baking today go well and I have time...I might do the toffee bars today also.

Let me just say for people who get cookies as Xmas Gifts.... They do require alot of time, love and effort. They are not cheap either! I hate to say what my grocery bill was after buying all the flour, brown sugar, white sugar, confectioners sugar, nuts,flavorings, candy, chocolate ..etc. Yeah I could have just went out and bought cookies cheaper but that just kinda takes the holiday right out of it...lol
