Modified Chicken Cattiatore

Sara's Modified Chicken Cattiatore (real chicken cattiatore involves a whole chicken, and I just use breast meat due to personal preference. recipe works if modified to include the whole chicken)

Cut up chicken breast into bite-sized pieces. Mince 4 cloves of garlic. Start cooking over medium heat in about 3 tablespoons of olive oil, sprinkle with salt and pepper. Add yellow onion, semi-juliened, and chopped red and yellow bell peppers, sprinkle with a bit more salt and pepper. Cook together until chicken is cooked through. Add dry white wine, such that veggie chicken mixture is up to its ankles, so to speak. Reduce to medium-low.
chop up mushrooms (i prefer portobellos, because I don't like the texture of the other mushroom varieties) and 1 clove of garlic. saute in a little olive in a separate pan. when thoroughly cooked, transfer to the rest of the mixture. Add 1 can tomato paste. Add simple tomato sauce (ie containing nothing other than tomatoes, garlic, and olive oil, if possible) and fresh chopped basil and oregano. Bring to a gentle boil, to allow most of the alcohol to boil off. Season with additional dried herbs to taste. Serve over rice or pasta.
