Vietnamese shiritaki Noodle Salad

3 cloves garlic, finely chopped
1 cup chopped cilantro
1 jalapeno pepper, chopped
1 tablespoon splenda
1/4 cup fresh lime juice
3 tablespoons fish sauce
1 teaspoon salt
2 8 oz packages of shiritaki noodles
1 carrot, julienned
1 cucumber, halved, peeled, seeded and sliced into thin halfrounds
1/4 cup chopped fresh mint
1/2 cup finely shredded napa cabbage
1/4 cup chopped dry roasted nuts

Boil shiritaki noodles for 2-3 minutes. Rinse Shiritaki noodles well 4-5 minutes under cool running water. Cut into 3-4 inch lengths pat dry with a paper towel and let stand for 15 minutes. Place the garlic, cilantro, jalapeno, splenda, lime juice, fish sauce and salt in the bowl of a food processor and process until almost smooth. In a large bowl, combine the sauce, noodles, carrots, cucumber, mint and napa cabbage. Toss well and garnish with peanuts.
