Irish Stew
Tomorrow is a colleague's last day at work. As she is moving to Ireland (the lucky bitch), we're doing an Irish theme (natch) for her going away party. I volunteered to make Guinness Beef Stew. Has anyone ever made this? The recipe suggests that I serve it over mashed potatoes, but that seems a bit much as there are already 2 lbs. of potatoes in the stew.
