Recipe backlog: how to NOT get it finished

Apr 10, 2011 21:46

Due to, basically, life happening, my plans for semi-regular recipe entries have fallen through. Heartened by the ever-encouraging
falena  I was to write down a few backlogged ones. BUT.
...I discovered with great consternation that one of the most basic, easy, not-quite-cheating sweetmeat recipes in my book was not universally known, therefore prompting me to post this recipe in stead of the planned one.

 Ingredients:

200 g Amaretti ;
 ca. 80 g rasped coconut (coconut flour);
 ca. 150 ml coffee (espresso or mocca - I have no idea how instant coffee will work);
 sugar;
 Nutella (hazelnut cream) and/or mascarpone (fresh cheese) and/or chocolate (cream or molten);

Dunk Amaretti in the cooled, sweetened coffee. Dunk briefly and Do Not let them go soft.
Spread a bit of Nutella or mascarpone or chocolate on the biscuit's base and use that as cement to pair the biscuits.
Now roll those biscuit-couples into the coconut flour.

Store at cool temperatures (fridge) before serving.

Blink and wonder where they all went.
