Budino di Cioccolato

For greentea214 : you might want to halve the recipe, since this will make enough for 4-6 small ramekins. Comment with absolutely any questions, and I'm happy to respond. Have a fabulously romantic meal!

8 oz bittersweet chocolate, chopped
2/3 cup whole milk
2 cups heavy cream
1/4 cup espresso, very strong (can buy instant espresso powder in baking section, or hit up starbucks)
1 tblsp sugar
2 large eggs, room temp, lightly beaten
2 yolks, room temp, lightly beaten

Preheat oven to 325 degrees.  Prepare water bath. Butter ramekins.

Simmer milk. Turn off heat and add chocolate.  Remove from burner and cool 5 minutes. Add remaining ingredients, whisk to blend. Strain mixture through tight sieve to make smooth texture (not necessary, but makes a velvety texture). Divide chocolate mixture evenly among ramekins.

Place ramekins in water bath with boiling water halfway up the sides.  Lay a piece of slited parchment paper loosely over ramekins. Bake in center oven until budinos are just set at the edges but still trembling in the center, 45 - 50 minutes (note this will be less if you bake fewer ramekins, check 10 mins earlier).  Serve in ramekins, warm or room temp, but not chilled. If you like mint, lay a few small fresh leaves across the top of the flan.

Makes 4-6 small ramekins.
