My brother Oliver came up for his birthday today and in honor of the occasion I made a Chocolate Coffee Mousse Pie as follows.
Mocha Mousse Pie
Takes about ten minutes, not counting dishes, and tastes very time consuming =-)
1 package of chocolate chips the darker the better
4 eggs separated
1/2 cup of boiling water
1/4 to 1/2 cup of the coffee grounds of your choice
2 tablespoons of liqueur
1 tablespoon orange marmalade or 1 teaspoon orange peel
1 or 2 tablespoons vanilla extract
1 teaspoon chill powder
1/2 teaspoon orange extract
1/2 teaspoon ground Cinnamon
2 to 4 drops almond extract
1 or 2 grinds of sea salt (or pinch of table)
1 Graham cracker or Oreo cookie pie crust
Fill blender with chocolate chips, egg yolks, coffee grounds and everything except the egg whites and boiling water. Blend the mixture and once it starts to homogenize, add the boiling water. When the mixture is smooth let cool to room temperature.
Beat egg whites until stiff and fold into the chocolate mixture.
Pour into crust and refrigerate until ready to serve.
Notes: If the water is just dumped on the yolks without them being mixed in, it results in cooked bits of egg yolk in the mousse.
Melted chocolate can be drizzled over the crust and then the filling to kick it up a notch.
The coffee grounds can be left out for a chocolate mousse.
All measurements are approximate and most of the seasonings are optional, this is just the version I made this time (and it is properly decadent), adjust to personal taste and preference.
And, if you just really want the calories, softened unsalted butter can be substituted for the water-just remember to melt the chocolate chips.
