Eric and I have started a tradition of making big Sunday dinners, where I make something kind of involved or fancy for dinner and he makes a dessert. It has only been going for a few weeks, but we both really like it and plan to keep it up. Tonight I made
Skillet Gardener's Pie, and Eric made
Red Velvet Cupcakes.
I used my big cast iron pan that usually just sits on top of the stove 24/7 because it's so big and heavy, but it was perfect for this recipe. I was complaining while I was making it, because it took SO LONG to make...about 2 hours. I was saying that it had better be damn good to be worth all of that effort and time. But then while we were eating it I was kind of wishing it wasn't so good because it took so long to make. It was absolutely delicious. Like one of the best meals I've ever eaten! I'm glad we have lots of leftovers. :-)
And the cupcakes...MMMMMmmmmmm so good. I love red velvet cake. We have a ton of frosting left over, so we froze it in hopes that we can use it next Sunday for carrot cake. I'm already looking forward to it!
