Mom's Cranberry Cake with Caramel Sauce Ingredients
2 cups unsifted flour
1½ cups sugar
½ teaspoon salt
2 teaspoons baking powder
4 tablespoons unsalted butter, softened
1 cup milk
1 bag whole fresh cranberries (about 2 cups)
Directions
Preheat oven to 350ºF
Mix the flour, sugar, salt, baking powder and butter together until the mixture resembles coarse crumbs.
Add milk and stir until evenly distributed.
Fold in cranberries.
Pour batter into a buttered 9x13 pan.
Bake for 40 minutes or until golden.
Notes
This delicious cake is so easy to make, and the contrast between the sweet cake and tart cranberries is wonderful. It's great warm right out of the oven or warmed up in the microwave for a few seconds. I'm definitely going to be stocking up on bags of fresh cranberries, which freeze well, so that I can make this often.
