It took me long enough, but finally I have conquered the Leek Pie
It tasted SO GOOD!
Recipe:
3-4 Leeks
2 cloves of garlic
3-4 Red potatoes
1/2 cup milk (or soy milk)
3 eggs
feta cheese (1/4 cup-ish)
pie crust
salt and pepper
olive oil
Preheat oven to 375.
Cut off the top few inches of the leek leaves (just leave the tender green parts and the white part). Slice in half, and rinse thoroughly, then chop. Slice the two cloves of garlic. Sauté the leeks and garlic in the olive oil, remove from heat after about five minutes, or when the white slices start to get translucent. Meanwhile, quarter the potatoes and place them in a pot to boil. If frozen, allow your pie crust to thaw to room temperature.
When the potatoes are done, drain them and set aside to cool. Combine three eggs, milk, salt, and pepper; stir. Cut potatoes into bite size pieces and layer on the bottom of the pie crust. Cover with leeks and garlic. Sprinkle the feta cheese on top, then pour the egg-milk mixture over it all. Bake for 30 minutes, or until a knife inserted in the middle of the pie comes out clean.
