I discovered this bread recipe - Artisan Bread in 5 Minutes that is so simple it is almost nuts. So simple in fact that I've memorized the recipe.
6.5 cups flour
3 cups body temp water
1.5 Tablespoons salt
1.5 Tablespoons yeast
Add water, salt, and yeast to mixing bowl, mix in the flour, put dough in a 6 quart container, lightly covered on counter for two to three hours, then refrigerate the dough. This makes a lot of dough. When you go to bake it, pre-heat oven to 450 degrees, I mean really make sure it is at full temperature... put a roasting pan on the bottom shelf of the oven and ideally a baking stone on the top shelf. I don't have a baking stone so just use an airform cookie sheet. I also don't have a pizza peel so I use parchment paper to transfer my boule of bread.
Take a fistful of dough, grapefruit size, work it into a ball and then form it into a round of breard, coating it liberally with flour. Let it sit for 5 minutes 30 to 60 minutes before popping it into the over. Now dump a cup of water into the roasting pan to create steam. Voila fresh baked bread with an incredible crust.
