Soothing on my raw sore throat.


Hot Chocolate
Serves 2

Ingredients
2 c. whole milk
1 heaping Tablespoon (close to 1.5 T) Natural Cocoa.
2.5 T Vanilla Sugar (You can get this at Penzeys, or make your own, see below)
A v. small quantity of water (a couple of T.? This doesn't have to be precise.)

Directions
Put the very small quantity of water in your tea kettle on high.
Add the milk to a small pot, and put on medium heat.
Put vanilla sugar and cocoa in a small bowl.
When the very small quantity of water has boiled, pour it on the sugar and cocoa.
Mix/Whisk until the cocoa mixture is blended/dissolved. (Not the end of the world if you miss a few lumps of cocoa.)
Add the cocoa mixture to the milk.
Stir it around.
Keep an eye on it. When the milk just begins to steam, turn it off, and pour the chocolate into mugs or a different container immediately.
It should be perfect or close to perfect drinking temperature.

Making Your Own Vanilla Sugar
Cut a vanilla bean in half. Scrape all the vanilla-y goodness out of the bean with a knife.
Add the vanilla goodness to 2 c. of white sugar in a bowl with a good lid.
Whisk the vanilla about until the little black flecks are relatively evenly spread out. Don't worry if you get bits of pod in, as you will then:
Add pod to the mixture.
Seal it up.
Leave it alone for two weeks.
Tada! you have vanilla sugar.
