Mead 1: Secondary

Oct 30, 2013 21:31

So I racked into secondary today.

Smell:
Kinda hot, sweet, and fruity. The hot smell is probably from the oranges.

Taste:
A little cloying
Lots of orange flavor, moreso than the last time.
A bit sweeter than last time, too.
Tastes kinda carbonated and sharp. I think it's pretty acidic.

I feel like some of the negative flavors will age out. We'll see.

Some Notes:
Still need a 5-6 gallon carboy for sanitation.
Need to get more glass 1-gallon carboys for primary. Don't like using a bucket for primary, can't see what's going on with fermentation. Plus the buckets are a PITA to clean and I don't like the idea of using plastic long term.
Auto siphon, completely awesome. Just need to learn to use it right the first time. First step is plug one end, put other end into primary and pull up on siphon, release plug and then push down on siphon tube. Watch siphon magic. Again, I'm still clumsy at this process.
