After our move our chest freezer was suddenly empty, so to rectify it we bought a quarter of grassfed angus from a local (ish) rancher. Found a source from
EatWild.com (searched my state for a ranch I was willing to drive to and had good prices) called them up, and got a quarter from the last steer of the season. We picked it up today from the butcher, ending up with a 120+ pounds of mixed cuts (including odd bits) that filled our trunk to capacity and mostly filled our freezer.
I'm pretty excited about the possibilities for new and delicious recipes to try, and we're planning to get a half or whole lamb next year from the same ranch. Considering pig, though I'm leaning more to "buy pork belly" than "buy half a hog."
