[100 Things] Recipes I've Never Tried Before & Other Kitchen Disasters -- 002.

I've taken the 100 Things challenge by 100things_index. Actually, I'm an overachiever and I took two of the challenges. My master post for the challenge is here.



Banana Bread



#2. Banana Bread
Difficulty: Easy peasy
YumScale: 10/10!!

**I have been making this exact recipe since I was 12 or so. I've added in some of my own changes to it and you're more than welcome to make a female banana bread if nuts aren't your thing ;)

Ingredients
1 3/4 C. All Purpose Flour
1 1/4 tsp. Baking Powder
1/2 tsp. Baking Soda
2/3 C. Sugar
1/3 C. Shortening (I have subbed the same amount of butter if I didn't have shortening)
2 Eggs
2 Tbl. Milk
1 C. Mashed Banana **
1/4 C. Chopped nuts **
Spice Mix ***

**I never measure. Seriously. I use what I have. I usually use a whole bunch of bananas and double the recipe. It hasn't made it soggier or less nanerier if it doesn't equal a cup or it it's more than a cup. Same goes for the nuts. I don't measure!



*** I add in cinnamon, nutmeg, ginger, allspice and ground cloves and a dash of vanilla. I would suggest starting with 1/4-1/2 tsp of these to start. I, again, don't measure. I should have this last time but...

Steps

1. Preheat oven to 350 degrees Fahrenheit.
2. In a mixing bowl, beat sugar, shortening and spice mix until fluffy.
3. Add eggs, one at a time, beating until smooth.
4. Add milk and vanilla, beat well.
5. Add baking soda, baking powder, salt and 3/4c of the flour, mix well.
6. Add mashed bananas, mix well.
7. Add remaining flour, mix well.



8. Stir in chopped nuts (if you would like them OR keep them for the top OR do half and half :))
9. Make sure your helper is still waiting for you to mess up and drop something;



10. Pour into prepared loaf pans (PAM or shortening the inside) and bake for 60 minutes.
11. Knife should come out clean -- I've never had to change the cooking time in any oven I've baked it in.
12. Let cool as long as you can stand the overwhelming deliciousness and then serve yourself a slice with some butter or cream cheese! (keywielder likes it that way. Crazy girl.)
