My World Infamous "Two Bite Magic Black Bean Brownies" :
Super-Sekkrit Recipe and directions
One box of Betty Crocker's Low Fat Fudge Brownie mix.
One 15 oz can of Black Beans. Do not drain.
One teaspoon of cinnamon.
Oven:350 degrees F
My choice of cookware: nonstick mini muffin pans, sprayed with Pam
In a blender, pour your black beans (with the beany juices, yes) and cinnamon and blend until smooth. Don't worry if you can still see skins--these will disappear in the bake.
Into a large mixing bowl combine your brownie mix and your bean blend. Do not add eggs or oil, as the recipe suggests. The blended beans will provide all the moisture and natural oils to make the bake. Might be hard to stir at first and seem like there is not enough moisture, but trust the Loth-- it will stir together into a nice smooth batter.
This can be baked by the sheet or by the cup, as directed on the back of the mix box (which I have already taken to the dumpster and can't remember what it said) or spooned into mini cups and baked into cute little two bite brownies. I bake them for 10-11 minutes (when toothpick comes out clean). Let them cool if you can, and then POUNCE AND FEAST. Ahem.
Calories are about the same as with oil and egg, but the cholesterol is less and the fiber count more. And they are moist and cake-like and YUM! :D
