I've been forgetting how to make some dishes lately (oh vinegary coleslaw ;() so I wanted to make sure I wrote them down.
So this is like a crab cake but with salmon.
I bought a whole salmon at the farmer's market and had a lot left over from a simple grill so this was perfect.
Flake leftover cooked salmon about 3/4 c. worth (maybe 1/4-lb?) Take out any bones.
Add 1/2 of one green bell pepper, chopped
1/4 of one onion, chopped
handful of bread crumbs or more if you want to use less salmon.
2 eggs
Mix well, shape into 5 patties. Fry on stove on medium high until both sides turn a light yellow with some browning. Take off the stove, even if it doesn't look quite done.
Place them on cookie sheet and bake at 375 for 15-20 min. They'll come out dry on the outside and steamy moist inside (not mushy).
Serve with a squeeze of lemon.
I didn't add any salt since the fish was seasoned with salt, ginger, and lemon when I first cooked it.
