Was watching an episode of True Blood yesterday and suddenly felt struck by an overwhelming urge to fry up a batch of corn fritters. Despite it being only a few hours before bedtime, Sam & I schlepped over to the corner shop for a few missing ingredients and a short while later were stuffing ourselves silly with this Deep South favourite!
Thank you, True Blood, for bringing back some fond childhood memories of my father making the lightest, fluffiest, and tastiest by far corn fritters in the world! Can't remember the last time I made these; mine weren't quite as successful because I forgot the baking powder, but they were delicious nonetheless.
