Recipe Meme - Lantern Traybake

New recipes are always fun to try. So, when you see this, copy and paste this blurb into a new post along with your favourite recipe. It should preferably be something quick, easy and without rare ingredients. Actually, the best one is one you know in your head and can type out right now.

[I'm possibly going to fail on my own rules, as I have no idea how common condensed milk is outside of Scotland.]

In my household/family, baking is synonymous with 'traybakes'. A traybake, is, I have discovered, what American's would call 'bar cookies'. Basically, it's something that's made in a tray and then cut into squares. I mostly consider tray bakes to be uncooked stuff, but apparently brownies are classed as 'traybakes'.

Lantern Traybake

Ingredients

Base

4 oz butter
8 oz digestive biscuits (if you don't have digestives, just use what you would use for the base of a cheesecake. NB: Digestives are quite sweet.)
2 oz chopped cherries
4 oz cooking chocolate
4 oz raisins
small tin (~200g) condensed milk

Topping
vermicilli or white chocolate to cover

Directions

1. Gently melt butter, chocolate and condensed milk in a pan
2. Add all other ingredients and mix
3. Press into a swiss roll tin
4. Melt white chocolate, cover base and streak with a fork or sprinkle vermicilli on top

I don't have a picture, but I do have a tin of condensed milk that's been opened. If it's still ok, I may make lantern tray bake in the next few days and take some photos.
