If you are making pork tenderloin, and your recipe calls for spooning jam on top, and you choose strawberry because it is what you have on hand, then when you cut into the pork, the pork juices and meet will not be clear, but will instead be pink because they have been colored by the jam. So when the thermometer tells you the pork it cooked to 140 degrees, its done, even if the juices don't run clear. If you keep cooking it, you will wind up with a dry, unappetizing pork tenderloin.
