Having now read the descriptions of the courses, I'd recommend Faust, Frankenstein, and the Golem as the one I would most want to take.
I especially find it interesting that the course chooses one source each from Christian, Secular, and Jewish traditions.
The Jewish Medicine course would probably be my second choice.
Other than that, I really enjoyed Game Theory, and I think you'd like it. I'm not sure the Kung Foo course will be long enough for you to really get too involved (judging from what I've heard from Charlie, who just got his black belt, by the way), but it would be a good structured way to get you into a marshal arts course you couldn't skip.
The poetry course has an interesting conceit, but I'm not sure how it will work in practice. But bravo for even considering a course on poetry!
Since it looks like I can't take any other CS courses (unless I absolutely die and take Intro to Graphics), I'm leaning towards Game Theory + Faust, Frakenstein and Golems. The Jewish Medicine course seems interesting, but it could be insanely boring and dry. And by the way, I'm not seriously considering the course on poetry; the name was awesome and I e-mailed for more information. My range of acceptable poetry is very narrow, and that doesn't fall into it. I think the courses I'm really considering:

Vanessa Ochs is a very good teacher, in my opinion. She's very sharp and insightful. (I've never had her for an undergraduate course, so I don't know how she does in lecture/survey type settings.) If you don't know him already, you might enjoy talking to her husband, Peter Ochs. I remember a very interesting seminar, where he was arguing that we can't hope to understand the text until we understand how the tradition has understood the text, and Vanessa was arguing that we can't hope to understand the text until we step aside from the way the tradition has understood it, and look at it with fresh eyes
