It's been a very trying time, of late. What better way to kick back than friends and food?
On Thursday night I barbecued 2 large salmon fillets. I rubbed them with orange marmalade and sprinkled them liberally with sesame seeds. 7 minutes each side and they were perfect. For side dishes I'd cut up a few large potatoes and spanish onions, coated them in a butter and olive oil combination and placed them in an aluminum baking pan. I also cut up some corn cobs into small pieces, mixed with butter and seasoning and put them in a separate pan. Both sides took longer than the salmon, so I started them first. The trick is to cook on low with the BBQ cover down, then, when you are ready to put the salmon on, move the sides to the top rack. Delicious! It also helps when you are cooking outside to have a nice frosty can of Alexander Keith's Premium White beer.
Yesterday morning I got together with the band mates, and we had a very good session. It was tight, I tell you. A little U2, Tragically Hip, Pink Floyd, Placebo, Green Day, and Neil Young.
Last night my lovely wife and I went out for dinner. There's a nice patio nearby and it was gorgeous out -- sunny and warm, no wind, and not humid. Perfect patio dining weather. The place we went to, Safari Bar and Grill, makes great thin crust pizzas. I had the Margarita, which is simple bocconcini, basil, and tomato sauce, drizzled with balsamic. Carolyn had The Red, which has Grilled Chicken, Eggplant, Zucchini, Red Pepper, Goat Cheese And Mozzarella Over Tomato Sauce. Both were excellent. The company I kept, even more so. Top it off with a couple cold drinks in the sunshine, and it's great evening.
Today we are heading to Peterborough, to visit Ian and his lovely wife Kat, for a barbecue. Friends Simon and Fran, and Richard and Lora will also be there. It promises to be a great day.
