Pasta alla Amatriciana

Last night I made a new recipe that my Mom gave me to try. Kip said it was his FAVORITE so far! ((yeah)) Recipe with pictures behind the cut...

Pasta alla Amatriciana

6 oz. pancetta bacon, sliced 1/4 inch thick then cut into 1/4” x 1” strips
3 medium fresh tomatoes, chopped w/juice
1/2 cup parmesan reggiano cheese, grated
1 medium onion, chopped
1 package fresh mushrooms, sliced thick (The recipe didn’t call for mushrooms-but I likie!)
1/2 t. red pepper flakes
1 lb. Bucatini pasta (Bucatini pasta is a thick spaghetti shaped pasta that is hollow in the center, similar to a thin straw. There is also a similar variety, referred to as bucatoni, which has the same shape and appearance of bucatini, but is slightly thicker in substance. If you can't find bucatini, you can use Fettucini)

Prep your ingredients:



Here's the Bucatini pasta...see? It looks like a thin straw.



First cook the pancetta in a very hot pan. I used my trusty cast iron skillet. Bacon should be golden brown not burnt! While you're waiting pour yourself a glass of champagne. When it's done, remove with a slotted spoon onto some paper towel and set aside.





Now, in that same pan drain off all but 2 tablespoons of the drippings and add the chopped onions. Cook until carmelized, about 5 mins. To the onions add the red pepper flakes and stir, just to release flavor (30 seconds)



Add the fresh chopped tomatoes and stir. Let simmer on stove ten minutes. The toms. will begin to break down and the sauce will thicken.



A few minutes later I decided to add mushrooms. START YOUR WATER for the pasta. Pasta takes about 10 mins. to cook.

After the ten minutes is up add the bacon to the sauce.



Pour yourself another glass of champagne while the pasta cooks :)



Drain pasta well and return to the same hot pot.



Add the sauce to the hot pasta and mix well.



Add the grated cheese and stir gently.



All done!! (Ok, ok, I know that's a HUGE vat of a serving, but I was dealing with a ravenous spouse)



The only thing I might try next time is adding some fresh basil as a garnish, and also I might break the pasta in half so it's not such a big long hose. :)

P.S. Kip had seconds if you can believe that!
