… that I can make using my new mandoline. Pommes Anna was the first thing that came to mind, but there are so few ingredients in it -- I really doubt that vegan margarine can adequately take the place of butter here. (For anyone surfing through, I'm not a vegan, I just have a severe dairy allergy.)
I make tortilla espanola all the time with diced potatoes instead of sliced, so if I can't come up with anything more inspiring to try, I will fall back on that with authentic slices.
I have potatoes, sweet potatoes, a few turnips, and a whole bag of rainbow carrots on hand, and I know where the store is, so no vegetable is off limits!
