Part of the difference may just be the different instructors' styles. As with any other skill, only a few people are truly talented at teaching.
Or it could be the subject matter itself. Latin is the "dead language course" that the average person (who, face it, isn't much smarter than a chimpanzee) is likely to select, so the instructor may have found that a sing-song approach works better for most of his students. In contrast to OE, which I'd imagine people only select if they have a real interest in it.
If I haven't mentioned this before, I find it delightfully awesome that you're taking classes in OE and ON.

i find this to be an incorrect statement. because in the course of the course i'm pretty sure you'll say at least 1 of these words aloud, thus making yourself a liar. and if you're lying about this, who knows where it will stop.
