I don't normally do that.
My good friend, Laureen, on the other hand, makes up delicious recipes ALL THE TIME. She has been a competitor in lots of national contests, and was even a finalist in the Pillsbury Bake-off this year! Last year she appeared on the Food Network on the Ultimate Recipe Challenge.
She's entered in another contest right now - you could go vote for her recipe
here, if you liked.
Anyway, today I had a hankering for Double Chocolate Cookies, so I consulted my trusty cookbooks, but found them lacking a recipe for said cookies.
Then I consulted my trusty Internet, but I kept finding recipes that called for unsweetened cocoa powder, which I didn’t have. I did have unsweetened chocolate squares, though, and wanted to use those. After wasting too many minutes searching, I printed out two recipes and consulted my own self to make up a third recipe.
Let’s call these:
GIVE ME THOSE DOUBLE CHOCOLATE COOKIES RIGHT NOW
Ingredients
4 1-oz squares of unsweetened chocolate
6 Tablespoons of butter
2 large eggs
¾ cup sugar
¾ cup packed brown sugar
1 stick butter, softened
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
½ teaspoon salt
2 cups semi-sweet chocolate chips
(optional) ¾ cup walnuts
Directions
Melt 6 T of butter and unsweetened chocolate squares in saucepan. While the chocolate mixture cools, preheat oven to 375 degrees.
Beat together stick of softened butter and two sugars until fluffy. Beat in eggs and vanilla.
Stir chocolate mixture into egg mixture.
In separate bowl combine flour, baking soda, and salt. Stir chocolate mixture into flour. Add chocolate chips.
Drop cookie dough by teaspoonfuls onto baking sheet; bake for 10 minutes. Let cookies cool on sheet for 2 minutes before transferring to wire rack.
Clearly, this is not a healthy, heart-smart recipe ... enjoy at your own risk. :-)
