I've had plenty of griping with my school's anime club over this. We rarely ever see anything new and different, unless someone sneaks something in on youtube day. So I'm populating a list of very important anime people should watch.
1. Baccano!
Funimation literally just got it's hands on this one, you can watch the whole first episode streaming subtitled on their website when you type in the password Flying Pussyfoot (space and all) no it's not a hentai. The anime takes place in the US during the 30's Flying Pussyfoot is the name of a train. Interesting non-linear story that isn't too difficult to follow, cool characters, good animation. 13 episodes long plus 3 OVAs that wrap things up completely, labeled 14, 15, 16. Think Cowboy Bebop meets R.O.D. Mafia, immortals, ditsy robbers, and plenty of surprising violence thrown in and shaken together. A MUST SEE!! I don't care how you find it, WATCH THAT SHIT.

Official Website 2. Gintama
Yes Gintama has become a little more mainstream since the first time I started griping about it's lack of presence among the masses. But still not enough people have really seen it. You don't have to watch it in order as there aren't too many story arcs that take up multiple episodes, but when there are they're usually amazing. Such as the Benizakura arc (58-61), the Kyubei arc (76-81), and the most recent Itou arc (101-105). Gintama is first and foremost a comedy, but it has it's serious moments as well. It will keep you enthused with it's parodies (see ep50 OMG see 50!!XDDDDD), satire, slapstick, and occasional heart wrenching moments. All of the aforementioned story arcs are up on crunchyroll to watch. =3

3. Amazing Nuts!
A series of shorts by Studio 4 Degrees Celsius, AKA the same studio that has done shorts for the Animatrix AND the recent Gotham Knight. DVD is no longer in print, but some of the shorts are available on youtube. I suggest Global Astroliner and Kung Fu Love. Both are pretty awesome and showcase their stylistic range. Awesome animation, awesome soundtracks.

4. Soul Eater
This one is fairly new, but I'm already smitten by it. The opening sequence alone is awesome. Good animation, good use of music, interesting plot, and cool characters. It's still early in the game for this one, only 15 episodes are currently out. It is based on a manga which can be viewed on onemanga.com if you're interested.

Ok, yeah I know the first DVD just came out not long ago, and it already has a pretty decent fanbase, but it's still pretty new so I'm including it anyway. But OMG its a mech show that isn't just about the damn mechs! D: FINALLY! Bandai snagged it after ADV lost the license for whatever reason...they're releasing it in 3 volumes one a month starting this month in July. 9 episodes per volume subtitled only. The dual language editions are not coming until early 2009.

7. Ergo Proxy
Geneon lost it, and the story had some low points, but I still love it. The aesthetic is cool and the music is neat. I'd watch the fansubs because at the end of every episode there's a bunch of notes with all the cool things referenced in the show, such as old scientific philosophers. It's like a mix of 1984 and ghost in the shell.
