I have just made possibly one of the best vegetarian dishes ever. It started out as shepherds pie and has ended up like some kind of hotpot thing.

Adzuki beans, tinned tomatoes, brown rice, bit of veggie buillon, carrots, red pepper, garlic and herbs all cooked down and put in a casarole dish, then sliced potatoes and cheese on the top, baked in the oven.

Bloody hell, so nice!
