The fabulous weather the last couple days has left me not wanting to spend much time in the kitchen. During this kind of weather I live on veggie plates, wraps, dips, spreads, salads, and sandwiches.
Tasty Easy Avocado Spread
1 ripe avocado
half a lime
salt, black pepper, and cayenne pepper to taste
Scoop out the avocado goodness into a bowl, squeeze on lime juice. Mash with a fork until reasonably smooth (the smoother the less likely for brown spots). Add salt, pepper, cayenne pepper to taste. Excellent by itself on wheat toast or as a replacement for mayo on a BLT or club sandwich. Would totally rock on tacos, I'm sure.
White Bean Aioli
(adapted from Veganomicon)
1 can white beans, rinsed and drained
6-8 cloves roasted garlic (good instructions
here. totally did mine in the toaster oven)
1/4 c. extra virgin olive oil
salt and pepper to taste
Put beans in food processor and give a few good turns to get them well chopped up. Add garlic cloves. Keep whirling and drizzle in olive oil until well emulsified. Add salt and pepper to taste. Tasty on toast, baguette, on a BLT, veggie burger, or as the "sauce" in a roasted veggie wrap, etc.
For lunch today I had made up one piece of toast with each spread. I decided to go for it and put them together. It was tasty! Weird avocado-y bean-y goodness!
