I can make meals out of anything!!! Whaahhaaahahhahhahaaaa!
Pasta with Chicken, Artichokes, and Beans
Feeds 4 hungry people or 6 with salad & bread
1 16oz can white beans, rinsed and drained
1 package frozen artichoke hearts (or really anything fresh or frozen and green laying about will do, like broccoli or spinach)
2 c. (dry) whole wheat elbow macaroni (or other small tubes/shells)
about 8oz leftover roasted chicken (meat can absolutely be omitted)
3 cloves of garlic, smashed
1/2 onion, finely chopped
2 tbsp olive oil
1 c. chicken or veggie broth
juice from one lemon
fresh ground pepper, basil, oregano, & hot pepper flakes to taste
grated parmesan cheese
Cook pasta per directions on box and drain. Set aside. Thaw artichokes according to package directions. In a large non-stick skillet (a wok does nicely) heat olive oil over medium heat. Add onions, garlic, and artichoke hearts (If they need additional cooking, I like mine a little sautéed) . Once those are just starting to get a little color, add chicken, beans, and pasta. Stir well. Add lemon juice, spices, and broth. Reduce heat and simmer until heated through. Sprinkle on parmesan cheese. Great meal by itself or with salad/bread.
