Crust
2 cups unbleached white flour
1/2 cup sugar
1 cup butter, room temperature
Lemon Filling
1 1/2 cups sugar
1/4 cup unbleached flour
juice and zest of 3 lemons
1 teaspoon baking powder
3 eggs
powdered sugar, for decoration
Preheat oven to 350 degrees F. Mix crust ingredients together and press into a greased, 9-by-13-by-2-inch glass baking dish. Bake for 10-15 minutes. Cool for 10 minutes before adding filling.
While crust is cooling, make filling. Mix all ingredients together and pour over cooled crust. Bake for 20-30 minutes. Sprinkle on powdered sugar once bars have cooled, and cut while still in the pan.
Makes 18 bars.
