For example, did you know that Sebastian is a composer? He's not just some crab that's always around when lots of animals are singing. In the first scene he is introduced as a composer, so really it's his job/passion to organize them into song!
Also, Ursula is really scarry! And Arial's main dress is really pretty...I want one :-)
