I realize I never really talk about cooking on here, which is odd because I cook a lot. I'm always trying new things out. I usually try to keep things on the "light" side - not just because I'm attempting to lose weight, but because it's just so much easier. So, tonight I took Tilapia (a white fish - kind of like flounder) and dipped it in an egg mixture which had chopped up chives, pepper and some other random dried herbs thrown in. I probably should have coated the fish in flour first to make the egg stay on better, but, eh, whatever. I also cut up some yellow squash in strips - I use whatever vegetables are cheap and in season - and threw everything onto one of those
grill pans with the lines (mine is kind of like this, except it's of much lower quality). I actually only used that spray oil stuff, so it really wasn't heavy. It came out great! I squeezed a bit of lemon over everything at the end - you could put lemon on cement and it would taste good. Served some rice on the side.
My favorite thing to make, because, again, it's quick and light, are "pseudo-fajitas." Basically, I just take some kind of fish (usually salmon) or chicken, sprinkle it in this "Herbs de Provence" mixture I picked up at the grocery store a while back, grill it up with some vegetables, open a can of re-fried beans and store bought guacamole (from Trader Joe's) or fresh avocado and put everything into a tortilla. Yum, it's so damn good.
Every once in awhile, I'll get complicated and make a chicken or turkey loaf - I try to avoid eating mammals, so no traditional meatloaf - with roasted potatoes or something involving vegetables and pasta, but it's way too hot during the summer for such nonsense.
