I swear this isn't just a cupcake blog. That said, here's some more cupcakes. :)
Little Bit OCD note: YES, I did arrange them in rows by wrapper color. YES, it does bother me that a drizzle of filling is showing on that cupcake in the front.
These are Irish Car Bomb Cupcakes--Guinness in the batter, Jameson in the filling, and Bailey's in the buttercream frosting. And some mini chocolate chips on top, just for cuteness.
These were a HUGE hit at both parties I took them to, and they're pretty easy. One little change--I found that my frosting was thick enough and sweet enough after just two cups of powdered sugar, so keep that in mind. When I made the
French Toast Bacon Cupcakes, the frosting was WAAAAY too sweet (it was fine in a small amount and in contrast to the bacon-y cake, but I just dumped the leftovers because it was gag-me sweet on its own or on a vanilla wafer), so I had that in the back of my mind when I was making these.
