I can't wait to try out the pumpkin recipe this week.
It calls for sweetener, so I'm thinking we can make one version with sugar/brown sugar for you folk who are comfy with carbs and a second pumpkin in which I'll just use erythritol (the only sweetener I'm comfy with right now). That'll take care of two of the four pumpkins.
The others I believe I shall devote to make puree for pumpkin pie. I figure we'll want pumpkin pie both for Thanksgiving and for Christmas. I suspect the two pumpkins will fulfill those needs neatly.
Remind me to make sure we have enough Cougar Gold cheese for Thanksgiving soup. Or should I just automatically get more?
I know I felt underfed and sad at our Halloween feast, so I honestly think it's better to plan to have too many foods than to have too little. To that end, I believe on Thanksgiving we should have:
1. Turkey and Quorn Roast for vegetarians
2. a double batch of Cougar Gold Soup
3. Or: a single batch of Cougar Gold Soup and a batch of pumpkin soup
4. Mashed potatoes--unless you think mashed cauliflower is a good sub??
5. stewed cranberries and/or canned cranberry sauce for high carbers
6. ciders
7. Some type of green bean casserole (I think we could use frozen green beans and fresh sliced mushrooms & use that recipe that worked really well)
8. Olives
9. Cheese plate
10. Nuts
11. Pumpkin pie
12. Whipped cream
