Once again this year I have subscribed to a CSA (or farm share, if you prefer the less vague term). As before, I opted for
Stillman's Farm CSA, which has a convenient pickup here in Lunenburg.
And as before, I've been having trouble figuring out what to do with all these veggies. However!
I have enlisted the help of Pinterest this year, and I'm finding some really great recipes. It's not lack of creativity, but rather lack of time that stymies me.
But here are some things I've tried and liked:
Snap Peas with Meyer Lemon and Mint. I am one of those astonishingly rare people who doesn't just love sugar snap peas and eat them raw off the vine, so this recipe works well for me. Around these parts we don't fuck around with ingredients like Meyer lemon. Regular lemon zest works just as well.
Raw Beet Salad with Carrots and Ginger. The recipe in this blog post shamelessly stolen from Mark Bittman. I wasn't going to buy ginger root just to make this, but I can report this is still quite good with dry ginger. The flavor profile is different, but still tasty.
Sriracha Fridge Pickles. Everybody should know by now I hate cucumbers. So what do I do with cucumbers in my CSA? Turn them in pickles! In past CSA seasons I've had a pitcher of fridge pickles going at all times for whatever cucumbers came in. This is basically the same thing, except with sriracha, which makes everything better. They pickle chard stems in this recipe, which are quite good, but plain ol' cucumbers work, too.
Not a recipe, but my go-to salad when I have arugula and radishes in my box is.... arugula and radish salad. I know, shocking, right? Take a bunch of radishes, a bunch of arugula, maybe some onion or garlic, salt & pepper, and toss with balsamic vinaigrette. That's really it, but the spiciness of the radishes and the arugula make them the perfect pair.
Now I'm going to go back to my fiberiffic dinner of sriracha fridge pickles on top of beet salad.
