Banana Muffins

Originally swiped from The Coveted and Simply Recipes with my own changes. Ingredients

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (I like to do about half white sugar and half brown sugar)
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups whole wheat flour (or do a mix of this with all purpose flour)
  • 1 cup walnuts coarsely chopped (optional - sometimes I do a half batch with walnuts)

Preheat the oven to 350°F. Grease muffin pan with butter or line with cupcake paper. Mash bananas with a potato masher. With a wooden spoon, mix butter into the mashed bananas. Mix in the sugar, egg, and vanilla, then add in baking soda and salt.  Add the flour, mix. Mix in walnuts if you choose to go that route. Bake for approximately 25-30 minutes.

Today I put a little twist on this. I was walnut-less so I put in about 1/2 teaspoon of cinnamon. Keep an eye on these muffins as I slightly burned mine (but they're still edible). So good!
