I am running out of ideas for what to do for when company comes over. We're having people over on Fri. Usually I get stressed about trying to find recipes. Anyone have just incredible things that go over well at parties? My friends are into pretty simple and light things.

Chicken With Tomato Basil Cream Sauce
Chicken In Tomato Basil Cream
1 tbs butter or margarine
3/4 C finely chopped onion
2 cans (14 oz. each) plum tomatoes, coarsely chopped
1 C heavy or whipping cream
1/2 C thinly sliced fresh basil leaves
1/2 tsp salt
1/2 tsp freshly ground pepper
2-4 boneless skinless chicken breast halves
Heat oven to 450 F.
Heat butter in skillet over medium heat. Add onion and cook until
softened, 5 minutes. Increase heat to high; add tomatoes and cook until liquid is almost evaporated, 5 to 10 minutes. Add cream and bring to boil. Boil until slightly thickened, 3 minutes. Stir in basil, salt and pepper.
Arrange chicken in shallow baking dish; pour sauce on top. Bake 20
minutes.
I serve mine over Angel Hair Pasta. Seriously yummy stuff.

If I were allowed to pick my last two meals, this would be lunch!!
1 lb. Ground beef or turkey
1 med onion, chopped
2 stems of a stalk of celery, chopped.
Cook until done, drain fat. Cook a small pkg of egg noodles, and drain. Add to the beef mixture one can of tomato soup, 1 can cream of mushroom soup, and 1 cup shredded cheese. Season to taste with salt & pepper. Add noodle and turn into a greased casserole dish and bake at 350 for 30 minutes
Chicken Manicotti
1 box manicotti noodles
1 pound boneless chicken breast, finely chopped (3-4 chicken breasts,
cooked)
1 sm. onion, finely chopped finely
2 cans (10 oz. each) cream of mushroom soup
2 cups grated cheddar cheese
1 cup grated mozzarella cheese
1 sm. can mushroom pieces and stems
Parmesan cheese
Basil, garlic, salt, pepper, oregano to taste
Directions:
* Cook manicotti according to package directions, drain, lay to cool on flat
surface.
* Boil chicken as we discussed (can be done ahead of time).
* On stovetop, cook all the other ingredients and stir in chicken.
* Stuff manicotti shells with mixture until full, trying to not tear the
shells (But really, it's okay if you do, they still taste the same!!!!!)
* But into a 11x14 (or somewhere close to that) baking pan (I use one of
those glass things) Top them with any left over sauce, then cover with
marinara sauce or spaghetti sauce (I used garlic and herb last night and it
was good) Cook about 20 minutes or until sauce is warmed throughout, top
with more cheeses and cook for 5-10 more minutes. Serve with salad and
rolls.
This freezes really well and tastes soooo good warmed over in the oven.
