I'm pretty happy with the preserves for winter we prepared this year. There are the jams (sour cherry, apricot and plum), the compote (grapes), the tomato juice, zacusca (a sort of boiled pre-made food made of carrots, onions and peppers), roasted aubergines and various kinds of pickles: green tomatoes, mini-watermelons, bell-peppers, cucumbers and sauerkraut. Today I did the easiest thing - bought fresh peppers of different colors, washed and diced them and put them in plastic bags in the freezer. They're wonderful to use later, in soups and all kinds of stews!
