Recipes promised many moons ago:

Chocolate Pudding (this is one of those recipes where quantities, temperature etc actually matter, it does magical things but only if you don't screw up!!)

3 oz SRF
1oz cocoa powder
pinch salt
1 tsp baking powder
4 oz marg
4 oz soft brown sugar
2 eggs
1/2 tsp vanilla essence
1 tbsp milk

Sauce: 4oz soft brown sugar, 1 oz cocoa powder, 1/2 pint hot water

sift dry ingredients, cream butter and sugar, beat in eggs and vanilla. add flour mix, beat well. place in greased 2pt. ovenproof dish.

blend cocoa and sugar (sauce), stir. add water, blend well, pour over sponge mix.

bake 190 C, 30-40 min.

Truffles

4 oz plain chocolate
5 tbsp evaporated milk
1/4 tps almond essence
4 oz sponge cake crumbs
1 1/2 oz ground almonds
8 oz icing sugar
Dash rum/ rum essence

Melt chocolate in double saucepan, stir in everything else. Shape into balls, coat with cocoa powder/ chocolate vermicelli. Leave to harden.
