The Perfect Summer Lunch or Dinner

On HOT days like today (suppose to get up to 101 in the east county,agh) something cool to eat is the way to go.

So today I cooked up some "Mike & Crystal's Greek Pasta Salad" & it was bomb if I do say so myself.




Here's what you will need:

- "Vegetable Trio Rotini" noodles
- "Newman's Own Balsami Vinaigrette" dressing
- feta cheese (i use low fat)
- a can of sliced black olives
- a red onion
- broccoli

Here's how you make it:

- cut & stem broccoli for 10 to 15 mins (or until soft)
- use a little less than half of the red onion & cut into slices (i cut mine long & skinny, so picky people can eat around it, like kids or myself. But it needs the onion for the flavor)
- Boil the "Vegetable Trio Rotini" noodles (I use about 2/3 of the bag)
- Once done pour them into a large bowl that you will use to mix & chill in
- Pour in 1/3 cup of "Newman's Own Balsami Vinaigrette" dressing, black olives, & feta cheese (i use almost the whole thing) & stir in
- Once broccoli is done, tear it into smaller pieces (it easier then cutting since they are soft) & toss into bowl
- Give it all a good final mix
- Put bowl into fridge for about an hour & let chill




Now you are done & ready to eat! Enjoy!!!
