The art of self deception and fast food

I keep telling myself that I do NOT (not) have a cold coming on, that I'm just tired. Sore throat = pollen, aching muscles = Pilates/must have slept funny, sneezing = allergic to dust, tired = it's Monday.

But in the spirit of the wise dabhug I will be kind to myself and there will be no dinner prep involving chopping/frying/boiling etc but fast food tonight. This is fast food for me:

Grilled chèvre cheese

1/2" slice of chèvre cheese/person
Put cheese on a baking tray covered with baking parchment and drizzle over a little  honey and put some walnuts on the side to roast (you can drizzle those with honey too). Bake in a warm oven for a few minutes.
Serve cheese and walnuts on a bed of fresh spinach leaves with an olive oil & apple cider vinaigrette with sea salt & freshly ground black pepper (be really clever and use the spoon/fork you used to drizzle the honey with to whisk together the vinaigrette!) Sometimes I go wild and add some thin slices of apple to the spinach.
