I just made a totally kickass soup and I was so excited about it I had to tell the internet. I can't really take much credit for it being awesome because it was really pretty simple. Plus it was just a lazy person's version of a recipe I saw on Epicurious. It was egg flower soup (which I love, despite my egg phobia, due to the eggs being more like noodles and less like eggs).
The soup involved 2 cans of chicken broth (as I am not one of those people who just has leftover stock hanging around), 3 smashed cloves of garlic, about an inch of sliced ginger, and a splash of soy sauce all heated up, and then 2 beaten eggs stirred in after it was hot. I was not able to recreate restaurant-style egg threads, I think because the soup was hot enough that the egg cooked immediately on splashdown. I used a liquid measuring cup to pour it in so that it would be more threadlike, though, and what I got was wispy flowers.
The recipe said to remove the garlic and ginger with a slotted spoon before putting in the egg. I thought that sounded unnecessary, so I didn't. I was wrong. They disappeared after the egg flower wisps were in the soup and I almost ate them a couple times. Boo.
Anyway, delicious! Just the thing for a person with mild flu-like symptoms!
