I wasn't so sure about book 6. I frankly found book 5 to be a bit of a snore (and it'll be interesting to see how the movie tackles that). Book 6 didn't really close off enough plots for me - the author's got an awful lot of ground to cover in 7 (I forget how many horcruxes are out there but it's a few - then there's taking on Voldy and his death eaters, resolving various character developments, wheew).
Rowling recently stated that she gave one of the three 'dead' characters in book 7 a reprieve, leaving two major characters to kick the bucket. My choices are similar to yours - Voldy and Snape. If she was lying about not killing a third and goes for it, my pick is Draco, closely followed by Hagrid. Draco's such a dissapointing character - at one point I thought he had real potential to be a great antagonist - ah well, there's always book 7. Kind of secretly hoping Draco turns to good, but kind of feeling he won't. Hagrid just gets himself into so much trouble, and although he's tougher than a human by a mile, he's not invincible. Neville - oooh, she'd have to be cruel to kill him off. Noooo...he's gotta have a romance with Luna first...:p
