Happy Easter
I had a nice Easter. I went to my sister's house and we ate lots of carbs :) I was insane yesterday and went to Wal-Mart at noon on the day before a holiday. I made it out alive!! I really wanted another Pyrex portable dish. It's a 13 X 9 glass baking dish with a plastic lid, thermal carrying case, and a hot pack to keep your food warm. The new one also came with a cold pack and the case has extra space for serving spoons. Yes, I cook that much food that I need two carriers to haul it all to my sister's house :) I made a double batch of scalloped potatoes and a double batch of sweet potato casserole plus a coconut cream pie. I had everything organized so it all went smoothly. I find that because of the extra stress with the job and the rehearsals for the show, I'm having to be extra organized and efficient. I'm wondering how long I can keep that up before I forget something major.
