I just tried a variant that combined the two -- with paprika instead of cayenne (I can tolerate paprika much better), no scallions (alas my husband is not a fan), more rather than less cream (we actually had 4 cups corn so I went with a whole 2 cups cream), yes to garlic -- I thoughtlessly included a 1/4 tsp salt forgetting that bacon made it unnecessary, but my husband still really liked it (he doesn't really love corn, but he liked this pretty well; the other flavors helped overcome it).
