I decided to try a new recipe tonight entitled BLT Brunch Pie. The ingredients were such that I felt it would be just fine for super too. So, I made the pie crust without modifications because I know my lowly baking ability so I did not want to change anything. The filling got a makeover, though. Fakin' Bacon instead of real bacon, I didn't peel the tomatoes (I hardly ever peel any vegetable unless the skin is not edible or gross... I don't even peel winter squashes -- the skin is tasty), and I used Greek yogurt instead of mayo (not for health reasons, but because I don't use mayo except for in recipes that call for a little and it usually ends up going bad before I use it all -- oh, and Greek yogurt tastes better).
I don't know why this thing was called a BLT Pie. Sure, there was bacon and tomato, but there wasn't lettuce. Peppers and onions to make it crunchy, I suppose. But then there was lots of cheddar cheese. I've never had a BLT with cheese... since it was a new recipe, I did not mess with amounts.
I made the pie crust... then cooked the whole pie... and when I went to serve it, the crust broke apart. It was more of a casserole at that point. Damn tasty, though.
druidevo didn't even complain about the sliced tomatoes. Or the mushrooms which of course were cleverly disguised as the same chopped size of the crumbled bacon. If you have somehow missed it,
druidevo does not (knowingly) eat mushrooms.
Never had a BLT with mushrooms, either.
